Ok, I just couldn't wait to post this. I think an edited down version will eventually go on You Tube and be used for book publicity, but right now here's me making sausages by hand in my kitchen with no equipment. About 20 minutes long. ReplyDeleteWhere did you find the stuffer? I've been trying in vain to find manual stuffers - I've only found mixer attachments. About ten years ago I picked up eight aluminum ones when Sur La Table carried them, but as I've been encouraging others to make sausage I need a new source.
I tend to use a small pin to pop casing air bubbles, as I am more likely to create a tear using a knife.
Hey Thanks Jeremy, I just picked up a funnel at Orchard Supply and Hardware. Any hardware store will sell many sizes. $1.99. I just cut the end off as it was too narrow. But the big opening at the top is ideal. I think for motor oil!

ReplyDeleteFinally got round to viewing, and what a perfect way to avoid marking essays it was! I wholeheartedly endorse your sharp knives-alcohol rule - and the sausages looked rocking too. I want some. Guess I should get stuffing...
